This simple and insanely tasty recipe has my mouth watering as i'm writing this recipe! Its super quick to make, easy (and not very messy!) and is honestly one of the best desserts i've ever had let alone made. The texture of the blondie is out of this world, so don't seem concerned if it appears slightly underbaked when you take it out of the oven, that's all part of the gooey texture.
I LOVE syrup. So when my husband switched the syrup, for whipping cream on our Sunday morning pancakes, I wasn't too pleased. So in came my genius idea to make a dessert to get my syrup fix. And boy, it ticked all the boxes! I sometimes even add white chocolate chips into the blondie for that extra treat…

Ingredients:
For the Blondie…
170g Salted Butter
165g Light Brown Sugar
100g Granulated Sugar
1 Egg
1 Egg Yolk
2tsp Vanilla Extract
200g Plain Flour
For the Icing…
100g Butter
200g Icing Sugar
80ml Maple Syrup
Put the butter and sugar in a large bowel and mix together until creamy.
Add the eggs and vanilla, mix until incorporated.
Stir/Fold in the flour until all mixed in.
Transfer into a lined 8x8 pan and bake on 180C/355F, for 20 minutes.
Leave in the tray to cool.
To make the Icing: Mix together the sugar and icing sugar. Once creamy, add in the maple and mix together.
Pour icing over the blondie and leave to set.
