Chicken Wrapped in Bacon and Cheese

This meal takes me back to my childhood. It was always one of my favorite things my mum would cook for dinner growing up. It's almost hunter's chicken, but not really.
When I was younger I had a disgust towards sauce. Any sauce. Yes, even ketchup!! (the whole ketchup thing has actually stayed with me through adulthood!) Mum knew this, so it became hunters chicken, without the BBQ sauce. And in all honesty, I think it's waaaay better this way!
Since moving away from home in the UK to the US, and then suddenly losing my dear mum, I was craving ways to feel close to her, and home. I randomly decided to try this dish for my husband and his parents one night, and no ones been the same since. It became a fan favorite, to the point where my husband requests it for dinner on a weekly basis! Which I have absolutely no complaints with;)
It makes a great dinner, accompanied with some garlic spuds and veggies or salad. The filet version is also great for dinner parties for guests to enjoy on their own. Or a packed lunch the next day.
Oh, and remember….there's never too much cheese!!!!

The Recipe
Prep Time: 15 Minutes
Cook Time: 40 Minutes (depending on size of chicken used)
Ingredients:
-Chicken filet or breast (however many you desire)
-Bacon Slices* (the thicker the better)
-Garlic Granules
-2 tablespoons Vegetable Oil
-Cheddar Cheese
Pre-heat oven to 400f
*If you are using chicken breasts, use 2 slices of bacon. For Chicken filets, use one slice per filet. Wrap the bacon around the chicken and gently season with garlic granules. A splash of olive oil and pop in the oven for 20 minutes.
Remove the meat from the oven. Splash the oil in the pan/tray over the chicken with a spoon, to keep it juicy. Add the cheese slices. (this is only half of the total cheese we will use.) Place back in the oven for a further 15 minutes. *At this point I usually turn the oven up to 430f as I like to crisp up the potatoes that are also cooking.
Add a second layer of cheese slices on top of your chicken and return to the oven for another 5 minutes, or until chicken is cooked through. (When serving, don' forget to drizzle the melted cheese at the bottom on the tray over your chicken!)
*I usually serve this delicious dish with crispy potatoes and veggies such as asparagus, peppers and arugula, or carrots and broccoli.
